Apple Relish from the Standard Figuring Book

From Wikipedia: “A relish is a cooked, pickled, or chopped vegetable or fruit food item typically used as a condiment in particular to enhance a staple. It originated in India and has since become popular throughout the world.”

Late summer into autumn is a good time of year for a recipe that uses tomatoes and apples. Grandma Falba’s collection of recipes includes many varieties of relish, this one includes apples!

Apple Relish

30 ripe tomatoes
10 onions
12 apples
5 green peppers
1 t cinnamon
1 t celery seed
1 t mustard
2/3 qt vinegar
Sugar and salt to taste

Cook until done.

I’ll assume that all the ingredients are chopped, apples are peeled and so on. Different varieties of apples would result in different flavors for this relish.
