Cornbread

Doesn’t every collection of recipes have a good one for cornbread? Of course, especially if that collection is of the meat and potatoes basic good food without bein’ fancy type of collection. This cornbread recipe came from my mother, and Grandma kept it in her ‘favorites’ envelope, and it’s yet another example of how there are some things that Grandma knew and didn’t have to write down: she knew that the baking pan for cornbread would need to be buttered before using.

Cornbread

mix together:
2 cups corn meal
1 cup flour
3/4 cup sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/4 cup oil
1 egg
3/4 cup milk

Bake at 350° for 20 min.

Grandma labelled this recipe “Carol and Carrie’s Corn Bread”. This might be the only credit I’ll get in the whole collection (I’m Carrie).
