For a few years, Grandma earned extra money my making and selling her own peanut brittle. She had lunch-sized brown paper bags full of this wonderful treat spread on the kitchen table, with the name of the lucky customer and the price written on each bag. How do you make peanut brittle? This is how Grandma made hers!
Peanut Brittle
2 C white sugar
1 C white Karo
1 C waterboil together in a heavy skillet or pan till spins a 8-10″ thread (about 10 min). cook on med hi.
Then turn to “med” add 2 cups (12 oz) raw Spanish peanuts. Now cook till amber color (about 10 min) take from plate & add 1 t vanilla, 2 T margarine, shake of salt, & 2 t soda.
Stir well, it will foam.
Pour into well greased big cookie sheet with sides. Don’t spread the foam out. Just lightly. Cool & break up. Makes 2 lbs.
In 3rd grade, I remember Grandma making daily batches of her peanut brittle, taking orders on the phone, and people stopping by to pick up their bag. Hers is still the best peanut brittle I’ve ever had.
